Ravbar has the largest table for regular guests in the Karst!
Why is that? The evidence follows…


Karst prosciutto
Karst prosciutto from the Ravbar prosciutto farm, which is a little higher up in the village (Oštirjeva farm); olives, fennel flower, and melon from own garden.
Smoked trout
Smoked trout (Bubec, Ilirska Bistrica), sliced cucumbers, home-grown blackberries, fennel flower, caper fruit. Ravbar does not hide, but rather emphasizes, that it wants to offer “only” simple good things.


Ravioli
Homemade ravioli are Ravbar’s staple, but they’ve been rejuvenated. They used to be made with curd cheese, brown butter and fried sage, in a more classic way, but since son Aljoša has been in the kitchen, they’re now filled with cream of young peas, in goat cheese foam and sage butter, with the addition of pistachios.
Cannelloni
Cannelloni with prosciutto, cheese and chard, meat sauce. Cannelloni are Ravbar’s biggest specialty! The most popular dish of most Ravbar’s regular guests! A house dish that is so special that it cannot be found anywhere else! They are not cannelloni at all, as they are more like pancakes, only they are made of dough. They are not rolled round, but flat, and in between there is a filling, which is always the same, but still a little different due to the season.


Beef tagliata
Beef tagliata with grilled vegetables (peppers and zucchini), rocket and parmesan cheese cut into strips. Olive oil Boris Sabadin, Koper. Could it be any simpler? No!
Lamb chops
Lamb chops, roasted zucchini, sweet mint dressing.


Potato rolls
Kifeljci (potato rolls) are a must in the Karst. They are not equally good everywhere. Ravbar is at the top here too.
Plum dumpling
Plum dumpling and breadcrumbs on butter. If you’re lucky, if others weren’t faster, if there’s at least one left… It’s just small enough to include the “obligatory” chocolate mousse, and it’s as good as the strudel, which is also famous.


Chocolate bomb
Chocolate mousse, cherries in their own juice, chopped hazelnuts, whipped sweet cream. A real Ravbar!
