Visiting experience -Visit 2022

Gostilna Jež limits you to just its tasting menu, albeit giving you more than you expect! Even if you manage to eat and drink everything, you won’t end up under the table, rather in the end you’ll end up full of joy. Although there are a lot of dishes, you won’t pay too much, hence you’ll be keen to return. And even though Gostilna Jež is original and creative, its culinary adventure is above all comforting. Despite its tasting menu, Gostilna Jež is authentic, local and homely!

Magic boy

Pie with beef cream and carrots. The cloud is from the dried “protein” of snow beans with a cream of gilled mushrooms. Meatball in tomato sauce on rice paper.

Homemade bun and foamed yolk butter.

On river stones are dough pads with young cheese and porcini mushrooms cream with eggs.

Tatar

Mouflon tatar, pine needles oil ”to feel a little forest”,  pear, whole grain mustard and burned onions.

Mouflon carpaccio, corn salad from home garden with and 6 months ripened cow’s cheese from Sinji Vrh above Vipava (Golden Ring).

Beef in salad, yolk gel and pickled onion from Raka.

Krškopolje pig is with cranberries, pheasant with baked corn and duck with cognac and dry plums.

Chamois

On the spoon there is mousse made of chamois, with chicken skin cracklings and baked apples.

In a glass cup there is a bean in salad, with homemade sour cream, white onion in elderberry, potato popcorn.

John Dorry tatar, fermented cucumbers gel and balsamic caviar of Istenič vinegar.

Pocahed sea bass glazed with citrus oil on a kamut with porcini mushrooms.

Blood sausage

A burned slice of domestic blood sausage from Krškovolje pig, caramelized apple, sauted slice of Foie Gras, Lardo and spruce oil.

Mouflon, dumplings with yellow morel, baked corn, apple and hay.

Bratwurst made from John Dory, Mediterranean mussels and octopus with millet porridge, fillet of John Dory baked in a bread oven, potato, fried cabbage, olive oil cream, celeriac and apples sauce.

Egg cream with rum, sprinkled crushed caramel over the top.
