A 360-degree youthful view
At the top of the Doppler vineyards, which are bathed in sunshine from all sides, modern architecture doesn’t inflate in height but rather opens in width. In Kozjak nad Pesnico, where 360 metres is high, there are 360-degree views all around. On the Styrian wine roads, only the vineyards on the Austrian side have such a panoramic privilege. But there are wine bars there, whereas here is a gourmet!
Doppler estate wants to be among the best. Its head chef trained at the world’s best ’universities’. Above the modern wine cellar of his grandfather’s estate, which, thanks to the older daughter is now aiming for an ecological future, their parents built a wonderful restaurant. The weather is perfect, the view is included in the price, the comfort on the terrace is excursion-like, and there’s a festive air in the glass dining room. Apèro aperitif bites whet curiosity, so the young chef refreshes the palate with an amuse bouche. In the middle of the two-tone courgette roll, under the white tomato foam in a basil cream, there is a cherry tomato that has been soaked in lemon juice, and the courgette is floating in tomato jelly. It’s so tender that one is lost in a dream, even though we’ve only just started… What awaits us yet at Kozjak nad Pesnico!

Recommendation

Goose liver terrine, apricot jam with chilli, caramelised hazelnuts, buttery brioche and apricot juice topped up at the table. If a chef with such a resume didn’t offer (also) foie gras in the middle of his mother-in-law’s Styrian vineyard, it would be a shame to build such a fine wine cellar, because the view is such that it would be full even if the menu featured sliced salami. But since we aren’t used to this in vineyards, the young chef (born in 1996) not only goes for hours of tasting fine dining but also allows guests who are attracted by curiosity from one side of the border and the other to allow him to indulge for just a course or two. Literally, foie gras instead of cold cuts.

Wine list
Doppler Wine House. Lina Kopše converted her grandfather’s traditional wine estate to organic production. Sister Lana has added selected Slovenian and international wines to the Doppler wines in the restaurant.
Ambience
A large, covered terrace beckons for lounging in the middle of the vineyard, and the glass dining room offers a view of everything around you, including the kitchen. Fine dining, but in a vineyard!
