What would you prefer? To eat once at Hiša Franko or to eat every day at JAZ by Ana Roš? The question is, of course, rhetorical, as there isn’t a correct answer. Nevertheless, the best answer to the question of what JAZ is, according to the celebrity chef herself is what it isn’t. It isn’t a bistro and it isn’t trying to be fine dining. So, what is it? Ana Roš’s Ljubljana restaurant in which the best female chef in the world would like to eat every day, but she can’t, because too many people in the world want to at least once in their life eat at Hiša Franko.

Although JAZ by Ana Roš is actually JAZ for Ana Roš. It’s the fragrant flowers on the wall and on the uniform of the waiting staff bringing the treasures. It’s the large bouquet of flowers on a long table and a large mirror on the opposite side. It’s the high chairs from where guests can watch the chefs at work, and small tables that don’t need to be laid for Wiener schnitzel. This is a wish list that is fulfilled everywhere and by everyone, but that is exactly why we want them. These are just those dishes that everyone knows, but few know how to cook really well. “Call me young dining”, says Ana.
