Amuse-bouche
Meat: cones, chicken cream, pistachio, cashew and lemon powder, trout roe. The cashew cream is colored with beetroot. Classic chicken mousse with pistachios, dehydrated raspberry crumble on top, candied trout roe.

Fish: cones, Jerusalem artichoke, cashews, trout roe, pistachios. The cashew cream is colored with beetroot.
Tuna
Tuna sashimi, tuna saku (diced) cut, wakame seaweed, sesame, truffles, citrus fruits (yuzu).


Deer
Loin of young deer, Jerusalem artichoke, valerianella, pomegranate, herbs, wasabi mayonnaise. Deer carpaccio, roasted and shocked, herb salt, olive oil.
Salmon
Ravioli stuffed with cashew cream with lemon and basil, salmon, bottarga, veloute sauce, black olive powder.


Lardo
Parmesan risotto with porcini mushrooms, Pata Negra lardo, turmeric.
Octopus
Crispy octopus, parsnip cream, coffee mayonnaise, apple and cinnamon. Sauteed octopus, cooked with bay leaves (6 hours at 72 degrees), fried in double panko breadcrumbs. Citrus mayonnaise, apple and cinnamon gel (like jam), parsnip chips, sunflower seeds.


Cheek
Veal cheek, carrot crostata, winter vegetables, crispy kohlrabi, port wine sauce. Celery, Brussels sprouts, vegetables from the Dovč farm. Carrot crostata: puff pastry and pudding made from yellow carrots and vanilla.
Raspberries
Raspberry sorbet, white rum, Malvasia, a little gin, dehydrated raspberry.


Passion fruit
Passion fruit, mascarpone, vanilla, cardamom, around pickled apricot jelly.
Cherry and raspberry
Cherry in jelly, Callebaut milk chocolate, cocoa biscuit, ganache from 70% couverture, fresh raspberries, dehydrated raspberries, raspberries cooked in port wine, forest fruit cream.


Lemon
Baked lemon and almond cream, shortcrust pastry, meringue, apricot, passion fruit and apple topping, lemon balm leaves.
