An escape to the Karst
“Welcome to our home!” In their Karst, Nina from Vipava and Miran from Koroška aren’t restaurateurs and hoteliers but rather hosts. You can see it in their eyes when they say: “We really love what we do, with all our hearts.” They don’t work in their eco-hotel, they live with their guests! Among St. Daniel’s advantages is the fact that there is no signature chef, that the dishes are not signature, that dinner isn’t like in a hotel or like in a restaurant either, that the evening menu isn’t fine dining and that the dishes are plant-based rather than gourmet. Because it really is like home, the only difference being that at home the tables aren’t so beautifully laid, the food isn’t served so hospitably and everything isn’t so sustainably sourced.
Sustainable, ecological and healthy orientations and Karst natural, historical and culinary specialties beckon. The ambiance pleasantly surprises, the hospitality makes you feel warm inside, the welcome whets your appetite, the simple vegetable dishes are filling and the organic wines brighten your mood. Along with the sustainable, natural spirituality that has ranked St. Daniel among the ‘three best organic restaurants in Europe’ (EU Organic awards 2024), the main feature of its cuisine is its hospitality! The warmth of the hosts, which can be felt in everything you hear, see, read, admire, try, measure, touch, wear …, is the spice that at the end of the dinner, before you go to bed early and listen to solfeggio, creates the superior taste of St. Daniel’s Karst.
