Bread and butter


Greetings from the kitchen
Watermelon with homemade smoked cottage cheese, roasted pine nuts, chili oil and mint is refreshing. Buckwheat mass with warm home-made cracklings and coarsely chopped walnuts is warm and caressing.
Burnt trout
Poached and lightly roasted trout float in buttermilk, along with refreshing marinated cucumber, trout caviar and nasturtium leaves.


Medvedova zaseka
Poširan brancin je polnjen z medvedovo zaseko in ocvirki! Pusto ribje meso, ki pa je zaradi poširanja ostalo sočno, in groba, surova, poudarjena medvedova maščoba, ki pa je zaradi vinske spremljave in chefovih dodatkov (drobnjak, čebulna marmelada, okisana rumena koleraba, sveža grenivka) prav krotek in zelo eleganten farce (sesekljana zmes za nadev). Spopad, ki se izkaže za objem. Strah pred medvedom, ki se razblini v uživanje v morju.

Cottage cheese štruklji with hazelnuts, roasted and in cream, pickled porcini mushrooms and tea dashi.


Pork fillet
Pork fillet wrapped in bacon and topped with marinated green apple, onion puree and demi glace sauce
Chocolate terrine
Chocolate terrine, pudding cream, ice cream and chocolate crumble.
