In the Karst bura winds, the Japanese phrase ‘omakase’, which means ‘I’ll leave it up to you’, is an adventure in itself! The first challenge is to find the small village of Kazlje, then the next is to find Camut in Kazlje … Once you find it, you’ll find that everything is as it should be in the village hall: an old sofa for the tired, toys for children, a serving hatch for the chef, orange wine for the trendy, and a translator for the ‘secretive’ menu.

Kazlje is an idyllic karst village, but it is so far from the highway that only a few of its natives knew it before the arrival of the Japanese chef.

Chef

Chef Shin Sato traveled from the island of Honshu to Ljubljana via London, and to Sato Bento in Ljubljana via Sushimama and Moj Sushi. Slovenian friends brought him to the Karst..

Scallop

Chawanmushi is an egg custard that hides steamed scallops, trout roe and garlic foam in its whiteness.

Sea bass

Tempura

Crabs, shrimps and peppers, oyster fritter, fritter of soy milk bechamel with shrimps and zabaione sauce.

Sashimi

Sliced shrimp, sea bass, tuna, salmon, octopus and mackerel. There is fermented garlic on the salmon, and Japanese citrus sauce on the sea bass.

Bull red fish

Bull red fish, slowly grilled over charcoal, marinated and smoked with a Japanese citrus leaf. Cauliflower puree, Greek yogurt with kumquat, garlic foam, peanuts.
