Hospitality
The whipped butter with beetroot is as good as it is beautiful and the homemade sourdough bread is better than in many other places. Chicken pate in a crumbly dough is enhanced with quince jam to make the bite full, deep and elegant. The cod fritters are masterful and a memory that will have you coming back soon. There is also a brioche with stracciatella cheese and quickly pickled radicchio.

Marinated pickled onions, sardines, tomato concassé, marinated fennel, basil ice cream.


Tartar
Beetroot tartar with terrano reduction, hazelnut mayonnaise, fermented black walnut cream, Jerusalem artichoke chips, nasturtium leaves.
Beef soup
Beef soup, ravioli with chicken liver, brunoise vegetables, chives and parsley.


Gnocchi
Celery cream, pickled stem celery, wild garlic gnocchi, smoked cottage cheese from the Vidali farm, aged cheese foam, onion crumbs and smoked ricotta.
Venison
Venison fillet, grilled green asparagus, parsnip puree, fermented garlic, chardonnay and vegetable sauce, terano crumbs, daikon radish.


Sorbet
Pre-dessert: strawberry and rhubarb sorbet. Fruity, authentic and sincere.
Carrot
Carrot cake, mango sorbet, passion fruit gel.


Petit fours
Chocolate truffle + lemon and gin tonic.
