Butter and bread
A loaf of sourdough bread and four types of butter, herbal, beetroot, tepka pear, plain
First greeting
Potato dough stuffed with mohant and ceelry slice with curd, gin and smoked Zupan rainbow trout, rainbow trout caviar.


Second greeting
Duck terrine, beetroot, carrots cooked in duck fat, lyophilized raspberries.
Third greeting
Cabbage soup with potatoes and garlic, pear tepka, bacon chips and black garlic cream. A stew in a coffee cup.


Fourth greeting
Traditional Gorenjska breakfast, soft polenta, cracklings, egg yolk and potato cream.
Cabbage roll
Cabbage wrap stuffed with Mrkot’s barley, pickled Jerusalem artichokes and homemade mayonnaise from Šlibar’s eggs with miso paste, fried Jerusalem artichokes, Jerusalem artichoke mayonnaise, beetroot, beetroot juice, herbal oil.


Deer carpaccio
Deer carpaccio, tender venison pate below, celery cream, pear puree, fried curly kale, herbal mayonnaise, black walnut.
Lake trout
Winter stew (thick sauce of kohlrabi, potatoes and beetroot), trout, foamy white fish sauce with trout roe.


Polenta
Red polenta with pear, cider gel, dried carrots, pear tepka powder, vegan burnt sauce, herbs, a cup of cabbage salad with pear tepka.
Raviol
Raviol stuffed with Golar’s young cheese, thyme sauce, vegetable sauce with pumpkin seed oil, pumpkin cream, pickled Križnar’s pumpkin, Luznar’s pollen.


Shrimp with blood sausage
Blood sausage and apple, sauteed shrimp, shrimp essence and potatoes.
Chicken
Fine pasta with pear tepka, carrots and goose liver, pickled chanterelles and parsnips, juicy-roasted chicken with rich goose liver sauce.


Sorbet
Apple and mint sorbet: mint foam and apple granite, on a spoon is apple gel and apple peel powder.
Krškopolje pig
Pork loin with mushroom and herb crust, Mrkot beans, kale, carrot chips, shallots mayonnaise for freshness, Pustotnik goat cheese, clove sauce.


Dessert
Red wine ganache, white wine ice cream, ginger granite, orange and beetroot gel, honey sponge with caramel, lemon espuma, beetroot meringue, white and dark chocolate.
