Amuse-bouche
Amues-bouche is on the wish tree, which comes true because it has just blossomed, so everything is nice, fresh and, of course, still hot: fried cod in cuttelfish tempura with lemon cream; shrimp wrapped in beef and fried, with black garlic cream; crisp with porcini mushroom cream; a donut filled with aubergine cream and smoked duck breast on top.


Sea bass and trout
Sea bass and smoked trout, horseradish snow, marinated fennel, lemon oil, borage flower.
Homemade cheese
Beef roll stuffed with Jerusalem artichoke and mushroom cream, accompanied by cubes of homemade cheese, dusted with black olives and sun-dried tomatoes.


Cod foam
Under the foam of the cod, in the depth of the white plate, there is a classic French white (butter beurre blanc) sauce and grated cauliflower on top.
Chervil
Chervil root cooked in a veal base with chili peppers, fried chervill skin, chervil oil, oyster cream, buttermilk


The brain
Porcini mushrooms, scallops from Novigrad, just a little burnt, aged cheese from the Orešnik cheese factory and black truffles on top.
Guineafowl
Guinefowl, candied parsnips stuffed with corn cream, accompanied by stone-ground polenta.
