Mosaic of Soča trout, beetroot and horseradish gel, trout caviar and home-smoked Tolmin cottage cheese.
Gnocchi
Pumpkin gnocchi are cooked in fish broth and slightly grilled, shrimp and herb-spinach coulis. Exactly, it is no coincidence that on one side there is sea foam, to which the shrimps gave all their essence, and on the other, fish broth, to which the butter made the basic sauce.
