Sorica
Tolc in the most beautiful Slovenian village – as the locals will tell you and as painted by its most famous son, the impressionist Ivan Grohar – is so culinary surprising that it even changes the myth about local inns that are supposed to not change.

Tolc is many things. Therefore, he has to satisfy a variety of guests, which, of course, is not easy and simple. Tolc is a holiday organic farm visited by guests, literally, from all over the world.

When Primož Pintar says that the beef is hay-raised, from the local pasture or when it runs out from the Loška cooperative, it is not a modern statement, but a traditional taste! And when to this authenticity, which is, of course, not only the pride of beef, but practically (almost) all ingredients on an organic and self-sufficient farm, the owner of the farm adds his cooking knowledge, culinary curiosity and good food knowledge, simply good dishes with local tradition, the origin of the ingredients and the chef’s skill make it an excellent culinary experience

Seasonal
At the same time as the aperitif, the first amuse-bouche is on the table, a cold cucumber soup with dill, chopped vegetables (carrots, onions, leeks) and mustard seeds.


Cheese from Sorica
Cheese from Sorica is special (spicy in taste and penetrating in smell) like Mohant from Bohinj, so it likes the company of sweet plums. This greeting contains everything Tolc does, strives for, and knows.
Trout
Chopped trout (lake trout from the Zupan fish farm), portulac, toasted bread cubes in olive oil, zucchini flowers and pickled carrots, carrot powder.


Beef
Chopped beef on cheese cream (sheep’s and goat’s cottage cheese), beetroot mayonnaise, beetroot powder and sauce, egg yolk, tomato, bread toasted in butter.
Tortellon and trout
Tortelloni stuffed with smoked trout, horseradish cream, rainbow trout roe, parsley.

Tortelloni stuffed with pork, horseradish cream, crispy leek, meat sauce, spring onion.
Huchen and cauliflower
Fillet of sole cooked in apple juice, fish sauce, cauliflower puree, roasted cauliflower, wild apple and elderberry jam.


Thymus
Thyme sorbet and a little vodka added at the table.
Pig and potatoes
Pork loin (Stanovnik farm), baked young potatoes, carrot puree, carrot powder, natural meet sauce (from roasting) with mustard seeds, crushed pumpkin seeds.


Cake
Blueberry cake with currants. Seasonal cake, chocolate, blueberries and currants, with forest fruit ice cream.
Gingerbread
Medenka (“Dražgoše is known for its honey cakes”), below, a mousse of bee pollen (“slightly bitter”) powder, hazelnut ice cream, raspberries and French meringue.


Praline
Praline Molinet – chocolate house, Kropa. You choose as you wish and as much as you can (crispy pistachio, coffee caramel, yuzu white chocolate).
