Brisket
Brisket, chanterelles, leeks, and on the brain bone a fritter made of pulled beef, topped with cocoa gel. Slow-roasted beef breast, then roasted on the grill, sauteed chanterelles, roasted spring onions, celeriac puree, roasted leeks, meat sauce.


Carrots
Predessert – carrot cake with cream cheese, carrot chips and carrot cream.
Profiterol
Profiteroles filled with caramel and hazelnut cream, covered with caramel chocolate, chocolate ganache with hazelnuts.


Forest
Summer forest: rabbit clover, blueberries, chanterelles, cocoa. There is rabbit clover ice cream on rabbit clover moss, with blueberry gel, blueberry praline, blueberry foam, chanterelles mousse in the shape of a felled tree, and chocolate crumble in the texture of forest soil.
Petit fours
Baklava with pumpkin seeds, white chocolate praline with strawberry, pie with apricot and basil.
