Lardo with Asian spices and mackerel glazed with elderberry and soy sauce, smoked yogurt, grated lemon peel.


Trout and cauliflower
Trout, green tea, cauliflower. Zupan’s trout, marinated like gravlax, with added citrus and green tea, sauce of buttermilk and cauliflower puree, marinated fresh cauliflower, green tea gel.

Turbot and mussels

Apple tarte tatin, bread ice cream. A very likeable derivative of apple pie made from several layers of apples baked with caramel. Brioche ice cream, with brioche crumbs and caramel.
