Chef Urh Kapelar, ki se je izkazal že v več slovenskih restavracijah, zdaj na svojem v rodnih Trbovljah Zasavce uspešno prepričuje, da ni le grenadirmarš preprosto dober.
Simple yet good
“Come right in and there’s no need to take off your shoes!” is the greeting at this bistro in in the middle of Trbovlje from hosts Barbara and Urh. This small restaurant is simple yet good. And Bistro Bombina really is small, homely, with bare tables and jolly caricatures, wooden benches and soft cushions, large windows, a wide selection of wine and the chef in the kitchen among guests. Don’t take your shoes off at Bombina, since you are likely to be blown away by Urh’s simple yet good food!
In Slovenia, there are two extremes of bistros: those with fledgling chefs who strive to be fancy, and in doing so deny the simplicity of bistros, or generic bistros, which copy each other’s menus, and in doing so attest to their poor cookery knowledge. Bombina, however, is finally a real bistro, which is small and simple, meaning the emphasis is entirely on good food. It may be simple but is all the better for it.
Urh and Barbara have transformed a former Trbovlje cake shop into small, pleasant and heart-felt Bistro Bombina, so their guests can feel ‘sweet’, eat well and drink well, too.

Ko se chef, ki se je kalil v tujini in se izkazal že v več restavracijah pri nas, odloči, da bo šel na svoje, ga pričakuješ s pompom sredi Ljubljane in s sponzorjem za hrbtom. Ampak, sredi Trbovelj in sam (z ženo)?! Postrvji tatar z emulzijo dagenj, pokrovače s pistacijevim pestom in omako pinjenca, ne pašteta in seveda ne foie gras, temveč račkin rillettes, cvetača, zelje in kvasna voda za topli začetek chefovega menija, hobotnica v čičerikinem raguju z ndujo, račje prsi v ohrovtovem gnezdu, baskovski zažgani sirov kolač in francoski čokoladni cremeaux … Preveč za Trbovlje? Če bi bilo tako, potem bi bil trboveljski Dewesoft lokalna delavnica, ne pa visokotehnološka multinacionalka! Ne, Trbovlje niso znane več le po grenadirmaršu!
