Cooperation is key
Georgie Bistro is proof that times are changing. That’s why cooperation is key while we’re not too old! While in the past youths made music, nowadays they ferment. Hence Georgie Bistro’s team is like a youth band, which has chosen gastronomy, or rather bistronomy, as its new rock. These boys and girls mature faster nowadays, just like Krškopolje pigs, which are fermented with koji to mature after just a few days. Although on the outside they don’t show the tell-tale signs of being dry-aged, but rather tattooed (with black pudding!), the inside is mature, deep and has an umami flavour.
Cooperation is key in this chef’s show, which doesn’t (only) showcase forms, foams, techniques and make-up, but also ideas, knowledge, surprise and superior flavour.
Now, when Monstera is no more, Georgie Bistro has replaced it and successors are not only born to star chefs, but also to side streets, it is important to cooperate in this kind of bistronomy, which is why not only fine dining, but also bistros have three hearts. Isn’t it even better if the chef’s signature is legible, the waiters don’t wear gloves, and the guests aren’t buttoned up to the collar?! Even though there may only be one piece of cutlery for all 14 dishes. Try everything!

Guests come to this modern, stylish, cheffy and creative bistro because they enjoy being in company, chatting while eating and having fun in a relaxed manner. Hence, this isn’t a place one visits seeking food superlatives, rather food that one eats in high spirits. But Georgie Bistro appeases one’s appetite in a different way and with originality and creativity. When guests want familiar food, they get it in a new way, when they want something predictable, they get an unpredictably good effect, when they want a new chef, they already know him well, and when they want a new place to go out to eat, they feel at home in it.

Wine list
sommeliers Gregor Jelnikar and Janez Trelc
There are 70 labels on the wine list, of which 40 are wines by the glass. It’s not generic and doesn’t rely on wine merchants, the guys discover, research and negotiate on their own. And because it is ecologically (so-naturally) aware! Such wines – “carefully selected local organic wines” – are also the best match with this (ferments, aftertaste) food.
Ambience
Small tables and a long bench, white walls and a high ceiling, a shop window view outside and a chef’s view inside. Georgie Bistro isn’t a place you go to sit for hours, as the cookery show is hidden behind illuminated bricks while the concert by the young band is lively because everyone – waiters, chefs and guests – enjoy it precisely that way.
