The left pocket

Carinthia has long been known as the left, hidden, forgotten pocket of Slovenia. In culinary terms, however, this has changed in recent years, also thanks to the return home of the young chef, who won a silver medal at the major European cookery competition European Young Chef Award.

As expected, the venison melts in your mouth, and the rich sauce with spruce needles supports it structurally. The simplicity and effectiveness of the salad of micro herbs and wild herbs, seasoned with plum vinegar, is a surprise due to its great depth of flavour with little surface, the puree of jam-roasted plums, without added sugar, but with saltiness and heat. The young chef’s dishes are so mature that you have to squint at the chef’s year of birth for each one. 1998!


Therefore, when it comes to GT19, the roles have been reversed. Not only is the son a chef, but the father helps him. The guests have also changed. Carinthia has been underdeveloped in culinary terms for several years, but now the main square in Slovenj Gradec has got the final proof that not only Carinthia but the whole of Slovenia needs a new Carinthia motorway.

The chef is too young to know so much … hence he is so daring! But you don’t need to worry, leave it to him and let it be a surprise. It starts and ends as befits Slovenia’s Carinthia region, and along the way – particularly as he is so young – the food is a picture book of ideas, knowledge, techniques and, above all, Carinthian specialities. This is about bravery, the chef’s and guests’, which ends with enjoyment. At the moment, however, a tasting menu is only on Fridays and Saturday evenings and only for a maximum of 18 eaters, curious to know more. Meanwhile, from Wednesdays to Sundays during the day, its simply better on the main square.
