As a serving trolley trundles through the fancy dining room on the ground floor of a prestigious business and sustainable building with natural light and a green view, guests impatiently speculate: “Is this my wild sea bass from the oven?”
Every city needs a restaurant like this, for those guests who use lunch for an important conversation and dinner to celebrate the agreement reached. Ljubljana once had Maxim in the city centre, now it has Klas in the business centre. Only the chef is the same.
Klas doesn’t try to be gourmet, but it wants to be ‘cheffy’; because its location makes it a favourite with guests. They like that there is a reserved spot for their car, that there is a partition wall behind their table, and that the chef knows what they like. They like the waiting staff to make recommendations and then leave them alone, and for the chef to marinate their sea bass, mix their risotto and sprinkle truffles over everything, and then cook the most famous steak in the world the way the great composer (Rossini) preferred it in the 19th century and the way it is still the best in Ljubljana today.

“Seafood or meat?” is the most common choice. Therefore, guests at Restaurant Klas prefer to listen to the waiting staff when they reel off what is fresh today and what the chef recommends. This has worked for a long time, mainly in such urban restaurants that everyone knows but only a few visit. They always order what they want, then the chef always adds the perfect amount of flair, so everyone is satisfied in the end. Those who nevertheless read the menu, order marinated slices of beef, rigatoni with beef rib ragu, and Rossini beef fillet, because they are – underlined on the menu.
