On Saturdays Fudo is somewhere you can go for breakfast, because it’s the weekend and you pass it on the way back from the market. It’s somewhere you can go for lunch any day, because there’s always something different on offer and because there are tastes from throughout the world. A place to go for dinner that’s to share, with accompanying wines. When one orders, everyone raises a toast and shares. Go to Fudo, where, in addition to everything else, you can eat something too!

Amuse-bouche: cracker with olives, homemade chicken pate with marsala and lemon caviar.

Sweet potato

With a wooden spoon: baked sweet potato, potato espuma with truffles, caviar, pickled celery. And with Malvasia, 2020, Atimo.

A taste challenge: roasted white eggplant, Greek yogurt dressing with anchovies and herbs, chilies and pine nuts.

Angus tartare, soya and wild garlic oil, chips with quinoa.

Ravioli stuffed with potatoes, shredded veal, crispy with turmeric, spring onion. Chardonnay 2015, Keltis.

Carp

Therefore, 2 hearts: arancini with carp, quinoa, chili and lemon, fried in panko crumbs, hummus on the bottom, caramelized tomato on top, a little tomato juice from baking, black lace.

Chicken fried in curry tempura, Asian vegetables, mayonnaise with avocado and wasabi.

Angus

Roasted Angus loin, butter sauce (herbs, garlic) with Taleggio cheese. Merlot Santei 2017, Matej Bizjak, Štanjel
