A Carniolan bee from Bled
From the garden beside the road, which leads to the lake, the castle can be seen, but the crowds on the promenade are out of view. Beestro surprises visitors with its distinctiveness, which is calming, elegant and has taste. The natural pastel tones are homely and hospitable, while also being upmarket and elegant. The tables are laid, guests are chatting, the waiting staff have shirts over their belts, but the chefs, dressed in white, are serious and on view for all to see.
Hotel Rosa’s bistro, which is enlivened by a Carniolan bee, is a refreshing revival from touristy Bled, because its simplicity isn’t (just) for the hungry but also for the curious. Beestro is so sincerely simple, as tourists like, but better than they are used to in Bled. Beestro is exactly what Bled needs, even though visitors to the town are usually satisfied with the lake and Bled cream cake. Its bistro-style character (chef’s enhanced knowledge, simplicity, good food) provides the most beautiful part of Slovenia with a divergence from the average, superficial and boring.

Recommendation
The menu is bistro-style short and concise, albeit with the chef’s conception. Beestro is far from generic bistro fayre, which is only fast without being ‘bright’. The amuse bouche consists of buckwheat and honey, which are a nod to Gorenjska, and the starters feature salads that are pleasant on the eye and full of flavour. To satisfy local tastes there are soups, which are clear and hearty, while for tourists there are krapi and žlikrofi dumplings. Meat lovers can choose from ribs, rib roast, rump steak, and chef’s choice for two, and for dessert, as befits Bled, the mandatory cream slice and grmada – the latter is akin to trifle.

With the Rose wine bar, Beestro’s wine selection has expanded considerably. Those who are more curious can browse for a long time or go around the corner, and those who want a glass of wine can start with champagne and continue with enough stylish variety so that the bistronomic and Beestro dishes don’t get boring.
Ambience
While other bistros are boring, cold, uncomfortable and samey, Beestro is inviting on the exterior and interior, hospitable, comfortable, warm and attractive, with a view of Bled Castle, near a hotel but not hotel-like, near the lake, whilst also hidden away.
